INGREDIENTS:
1/2 head Red Cabbage, shredded
2 Jalapenos, minced
1 can Corn, drained
1 bunch chopped fresh Cilantro
1/2 cup Pineapple ( I found a can called "Pineapple Tidbits")
Juice of 2 Limes
1/2 cup Mayo or Plain Yogurt ( I used a 1/4 cup of each)
2 Tbsp Honey
Vinegar (I used Seasoned Rice Vinegar)
Chipotle Pepper Powder
Smoked Paprika
Salt & Pepper
DIRECTIONS:
Combine Red Cabbage, Jalapenos, Corn, Cilantro, Pineapple, and Lime Juice in a large bowl.
Add in the Mayo and/or Yogurt and Honey.
Add in just a little splash of Vinegar. Taste, and adjust as needed.
Add in as much or as little of the Chipotle, Paprika, Salt & Pepper as you like.
